Cornish Lamb Shank
The source of this lamb is second to none; fresh and organically produced, a favourite dish with many of my clients. All the stages of production require skill to deliver a tender and flavoursome meal. Served on a bed of creamy mustard mash and accompanied with braised red cabbage.

Vegetable Medley
Combining vegetables to compliment the main dish is an art in itself. This medley was served with moist Tuna Loin Steak together with a refreshing Thai influence in the marinade. The peppers and onions are intensely fried, while adding delicate mushrooms, Pak Choi and fresh tomatoes at a later stage.

Tournedos of Beef
Prime West Country beef, soaked in a light soy and ginger marinade served with a medley of vegetables and topped with distinctive bean sprouts.

Chicken With Wild Mushroom
Whole chicken breast stuffed with a Mousiline of wild mushroom, basil and chicken fillet, steamed and then wrapped in Parma Ham. A great hidden surprise of a tasty roulade awaits your guests. Another example of a dish that is versatile enough for buffets or a main dish.
